Hardy Coleslaw Salad
Mmmhmm! Fresh, crisp, and tasty, it doesn’t get much better than coleslaw on a hot summer afternoon! Not only is it easy on the eyes but it takes only about 10 minutes to toss together! Also, you’ll have plenty of scraps to feed to your vegie loving dog…. or at least my dog sits patiently by my feet waiting for scraps of any kind.
Servings: 3
Ingredients:
1 head of green cabbage
1/2 head of red cabbage
2 large carrots
1/3 cup white onion
1/4 cup buttermilk
1 1/2 tablespoon apple cider vinegar
1/2 tablespoon olive oil
1/2 teaspoon salt
Put it together:
1. Cut the cabbages, carrots, and onion to your preferred thickness. My preference is slice long, thin strips of cabbage, and use a peeler on the carrots.
2. In a small separate bowl combine the buttermilk, apple cider vinegar, olive oil, and salt. This will be your dressing.
3. Toss the cabbage, carrots, and onion mixture with the dressing. You can start by adding a small amount and increasing the amount of dressing until your coleslaw salad is just the way you like it.
4. Cover, and place in the refrigerator until ready to serve!
